mango-ginger-chili at night

Ding ding ding...
And on our left side, Mango-Ginger-Tofu!!!!!
While on our right side, Chili Soy!!!!
To balance the whole dish, some couscous and rice. Let the tasteful fight begin!

The Ginger/Mango marinade is absolutely delicious. The bell-pepper (green stuff on top) is a great detail.
Some notes of improvement for future attempts:
  • use less orange and lime juice, their taste just take over too much;
  • add more green veggies to the rice, broccoli for example;
  • replacing the jalapeno with some dried smashed chili gave a much appreciated little kick;

Jakob's Chili Soy was faaaaaab! He's totally into it and getting some great results out of his efforts.

Everybody was pleased and fed healthily - surely something everyone's mom will be pleased to know.
